A homestyle roast is a comforting and hearty meal, perfect for family gatherings or a cozy dinner. Here's a simple recipe for making a traditional roast at home, with tender meat, vegetables, and rich gravy.

Ingredients:

  • 3-4 lb (1.5-2 kg) beef roast (chuck roast, rib roast, or sirloin)
  • 4-5 large carrots, peeled and cut into large chunks
  • 4-5 potatoes, peeled and quartered
  • 2 onions, quartered
  • 3-4 garlic cloves, peeled and smashed
  • 2-3 sprigs fresh rosemary (or 1 tsp dried)
  • 2-3 sprigs fresh thyme (or 1 tsp dried)
  • 2 tbsp olive oil
  • 1-2 cups (240-480 ml) beef broth or stock
  • 1 cup (240 ml) red wine (optional, for extra flavor)
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).

  2. Prepare the Roast:

    • Pat the beef roast dry with paper towels and season generously with salt and pepper on all sides.
    • Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the roast on all sides until browned (about 3-4 minutes per side). Remove from the heat and set aside.
  3. Sauté Vegetables:

    • In the same skillet, add a bit more olive oil if needed and sauté the garlic, onions, carrots, and potatoes for 3-4 minutes, just until slightly browned.
  4. Assemble the Roast:

    • Nestle the roast back into the skillet or Dutch oven, surrounded by the sautéed vegetables. Add the rosemary and thyme sprigs around the roast.
    • Pour the beef broth and red wine (if using) over the roast and vegetables.
  5. Roast in the Oven:

    • Cover the skillet or Dutch oven with a lid (or aluminum foil if using a roasting pan). Place in the preheated oven and roast for 2-3 hours, or until the meat is fork-tender.
    • Halfway through the cooking time, you can check and baste the roast with the pan juices for added flavor.
  6. Make the Gravy (optional):

    • Once the roast is done, transfer the meat and vegetables to a serving platter and cover with foil to keep warm.
    • Place the skillet or Dutch oven on the stove over medium heat, allowing the juices to simmer. You can add a tablespoon of flour or cornstarch mixed with water to thicken the gravy. Stir until the gravy reaches your desired consistency.
  7. Serve:

    • Slice the roast and serve with the roasted vegetables and gravy. You can garnish with fresh herbs like parsley for a bright finish.
